Fresh Food Box Recipe: Vegan Lentil Stew

Cook Time: 45 minutes

Serving: up to 6


Ingredients:
  • 1 1/2 cups lentils, rinsed

  • 1 tablespoon olive oil or 1/4 water

  • 1 medium onion, finely chopped

  • 3 cloves garlic, finely chopped

  • 2 stalks celery, finely chopped

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon ground paprika

  • 1/2 teaspoon cumin

  • 1/2 teaspoon dried thyme

  • 1 medium tomato

  • 1 tablespoon tomato paste (optional, not included)

  • 2 medium carrots

  • 2 medium potatoes

  • 6 cups water with 1 spoon vegetable broth powder or pure vegetable broth

  • 1 teaspoon cayenne pepper (optional)

Instructions
  1. Heat oil or water in a large saucepan over medium heat.

  2. Add onions and cook for about 3 minutes. Add garlic and cook for another minute.

  3. Stir in celery, Italian seasoning, paprika, cumin and thyme and cook for 30 seconds- 1 minute.

  4. Add lentils, tomatoes, carrots, potatoes, and broth/water.

  5. Bring to a boil.

  6. Reduce heat to low and simmer for about 40 minutes or until stew has reached desired texture.

  7. Season with salt and pepper and serve.

Storage:

Keep stew in a food safe storage container for up to 5 days or freeze in freezer safe container.
