Fresh Food Box Recipe: Vegan Lentil Stew

Cook Time: 45 minutes

1 1/2 cups lentils, rinsed
1 tablespoon olive oil or 1/4 water
1 medium onion, finely chopped
3 cloves garlic, finely chopped
2 stalks celery, finely chopped
1 teaspoon Italian seasoning
1/2 teaspoon ground paprika
1/2 teaspoon cumin
1/2 teaspoon dried thyme
1 medium tomato
1 tablespoon tomato paste (optional, not included)
2 medium carrots
2 medium potatoes
6 cups water with 1 spoon vegetable broth powder or pure vegetable broth
1 teaspoon cayenne pepper (optional)
Heat oil or water in a large saucepan over medium heat.
Add onions and cook for about 3 minutes. Add garlic and cook for another minute.
Stir in celery, Italian seasoning, paprika, cumin and thyme and cook for 30 seconds- 1 minute.
Add lentils, tomatoes, carrots, potatoes, and broth/water.
Bring to a boil.
Reduce heat to low and simmer for about 40 minutes or until stew has reached desired texture.
Season with salt and pepper and serve.

Keep stew in a food safe storage container for up to 5 days or freeze in freezer safe container.
