Makes 20 to 24 pancakes
INGREDIENTS
Provided In Mason Jar Mix
2 cups all-purpose flour
1/3 cup granulated sugar
4 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup dried cherries
2/3 cup semisweet chocolate chips
Additional Ingredients Required
2 eggs, beaten (or substitute 2 flax eggs*)
1/4 cup butter, melted (or vegan butter)
1 1/2 to 2 cups milk (or milk alternative)
*To make 2 flax eggs: combine 2 tbsp ground flax with 6 tbsp water and let sit for 5 minutes before using.
INSTRUCTIONS
Combine eggs and melted butter in a large bowl. Add contents of mason jar and stir until well blended.
Add 1 1/2 cups milk. Stir until ingredients are incorporated, but do not overmix. Add additional milk if thinner pancakes are desired.
Heat a large nonstick pan or skillet on medium heat until a drop of water dropped on the surface sizzles. Pour batter onto the hot pan, 1/4 cup at a time. Cook pancakes until golden on both sides.
