Roasted Chicken with Vegetables

This is a healthy and flavourful dish that can be prepared in ten minutes. It is a dish that is cooked in the oven but also one might try the same recipe in a pan by adding less yogurt than suggested in the recipe. You may serve the roasted chicken with vegetables with a side of rice, baked potatoes, or bread.


The dish cooks easily if you cut the chicken into small pieces. Remember that chopping the chicken to very small pieces will dry the chicken and you will lose the juicy flavour. If you prefer breast meat to leg, then you might be a little bit more generous with the olive oil. The result is a hearty, juicy, and delicious dinner platter.


Roasted chicken with vegetables can be stored in the fridge up to five days without losing its freshness, and can be easily warmed up for lunch or dinner.


Ingredients

500 gr. of chicken (breast or leg)

1 medium zucchini

1 medium bell pepper

10 cherry tomatoes

Half a bunch of asparagus spears

3 table spoons of olive oil

250 gr. of yogurt

Paprika

Garlic powder

Black pepper



Directions

Step 1:

  • Preheat the oven to 425 degrees Fahrenheit.

Step 2:

  • Wash and chop the veggies. Place them in an oven safe baking dish.

  • Chop the chicken into small pieces (1-2 cm cubes preferably). Place the chopped chicken into the dish.

Step 3:

  • Add yogurt, olive oil and the spices.

  • Mix all using two spoons until the yogurt and the spices mix with all the ingredients.


Step 4:

  • Place the dish into the oven and cook for 45 minutes.

Step 5:

  • Take the dish out of the oven and let it cool for five to ten minutes.

  • Serve with a side of rice, baked potatoes or bread.

Alternative Ingredients

  • With Fish – Instead of chicken, you might try the same recipe with fish. In this case, do not add yogurt.

  • Vegetarian -- You may cook the dish without any meat. However, it is better not to replace chicken with any root vegetable, such as potato, carrot, or celery root, as such vegetables will not cook at the same duration as zucchini and pepper.
