Ingredients
1 1/2 cup black beans
1/4 cup red lentils
1 Tbsp dried chopped onions
1 Tbsp dried garlic powder
2 Tbsp cumin
1 Tsp celery seed
1 bay leaf
1 Tsp chilli powder
1 veggie bouillon cube
1 small dried chilli pepper
Instructions
Unwrap the veggie bouillon cube. Add all ingredients into a large saucepan with 6 3/4 cups of water.
To adjust the spice level: omit the chilli pepper for mild spice, and add part or all of the pepper to increase the spice.
Bring to a boil over high heat, then reduce heat to low and leave to simmer until beans are tender and soup is thick. This should take about 90 minutes – add more water if necessary to soften the beans.
Remove and discard the bay leaf before serving. Enjoy!
