Spicy Black Lentl Bean Soup

Servings: 4-6


Ingredients

  • 1 1/2 cup black beans

  • 1/4 cup red lentils

  • 1 Tbsp dried chopped onions

  • 1 Tbsp dried garlic powder

  • 2 Tbsp cumin

  • 1 Tsp celery seed

  • 1 bay leaf

  • 1 Tsp chilli powder

  • 1 veggie bouillon cube

  • 1 small dried chilli pepper


Instructions

  1. Unwrap the veggie bouillon cube. Add all ingredients into a large saucepan with 6 3/4 cups of water.

  2. To adjust the spice level: omit the chilli pepper for mild spice, and add part or all of the pepper to increase the spice.

  3. Bring to a boil over high heat, then reduce heat to low and leave to simmer until beans are tender and soup is thick. This should take about 90 minutes – add more water if necessary to soften the beans.

  4. Remove and discard the bay leaf before serving. Enjoy!
