🌿 Tofu Tahini Salad + Halal Rice Crispy Treats

This. upcoming June 24th Food & Community session features a wholesome, protein-packed Tofu Tahini Salad paired with nostalgic Rice Crispy Treats made halal-friendly with gelatin-free marshmallows.

Both recipes are quick to prep and perfect for sharing or meal-prepping for the week!


🥗 Tofu Tahini Salad


This tofu salad is a light yet filling plant-based meal packed with crispy tofu, fresh veggies, and a creamy lemon tahini dressing. It's high in protein, fiber, and healthy fats, making it perfect for lunch or dinner.

Ingredients (Makes ~2 servings)


Veggies

  • 125g chopped romaine lettuce

  • 75g diced cucumber

  • 80g chopped regular tomatoes

  • 40g canned corn (~⅙ of a 341 mL can)

  • ½ red bell pepper, diced

  • ½ yellow bell pepper, diced

  • 1 spring onion, finely chopped


Tofu

  • 200g firm or extra-firm tofu

  • 2 tbsp cornstarch

  • ½ tsp garlic powder

  • ½ tsp paprika

  • ½ tsp salt

  • Pinch of black pepper

  • ¾ tbsp olive oil


Dressing

  • 40g tahini (~2.5 tbsp)

  • 40g water (~2.5 tbsp)

  • 15g lemon juice (~1 tbsp)

  • ½ garlic clove, minced

  • Pinch of salt


Instructions

  1. Make the Dressing - In a small bowl, whisk together tahini, lemon juice, water, garlic, and salt until smooth and creamy. Set aside.

  2. Cook the Tofu - Cut tofu into cubes. In a container, mix cornstarch, garlic powder, paprika, salt, and pepper. Toss tofu in the mixture until well coated. Heat olive oil in a pan and fry tofu for about 12 minutes, turning every 2–3 minutes until golden and crispy.

  3. Assemble the Salad - In a bowl, combine chopped lettuce, cucumber, corn, peppers, tomatoes, spring onion, and tofu. Add half the dressing and toss.

  4. Serve - Drizzle the remaining dressing over top before serving.


🍬 Halal Rice Crispy Treats

A chewy, nostalgic treat made with gelatin-free marshmallows for those with halal dietary needs. These rice crispy squares are quick to make and perfect for sharing.

Ingredients (Makes ~12 squares)

  • ⅛ cup butter (~2 tbsp)

  • 2 cups gelatin-free miniature marshmallows

  • 2½ cups crispy rice cereal


Instructions

  1. Melt the Butter & MarshmallowsIn a saucepan over low heat, melt the butter. Add in the marshmallows and stir constantly until fully melted and smooth.

  2. Add the CerealRemove from heat. Quickly stir in the crispy rice cereal until everything is evenly coated.

  3. Press into PanUsing a greased spatula or wax paper, press the mixture firmly into a greased 9x9-inch pan.

  4. Cool & CutLet cool completely before slicing into 12 squares. Enjoy!
