Ingredients:
1.5 cups of rice
1 avocado (diced)
1 cup cilantro (chopped)
1 red onion
1 cup black beans
1 pack firm tofu (grated)
1/2 lime
Taco seasoning
1 tbsp chilli powder
1.5 tsp ground cumin
t tsp black pepper
1/2 tsp paprika
1/4 tsp garlic powder
1/4 tsp onion flakes
1/4 tsp red pepper flakes
1/4 tsp dried oregano
Instructions
Pre-heat oven to 400F. Toss tofu with taco seasoning. Spread it on a lined sheet pan and bake for 15 minutes at 400F.
In a medium sauce pan bring 3.75 cups salted water to a boil. Cover & lower to medium-low heat and cook 1.5 cup rice until water is absorbed (about 20 minutes). Remove from heat.
In the meantime, wash & prep the rest of the ingredients and add them to a large bowl.
Once the grated tofu is ready, add it to the bowl and stir it all together. Optional: if you have vegan sour cream or other dressings at home such as sriracha etc. feel free to add!
