Vegan Taco Bowls


  • 1.5 cups of rice

  • 1 avocado (diced)

  • 1 cup cilantro (chopped)

  • 1 red onion

  • 1 cup black beans

  • 1 pack firm tofu (grated)

  • 1/2 lime

Taco seasoning

  • 1 tbsp chilli powder

  • 1.5 tsp ground cumin

  • t tsp black pepper

  • 1/2 tsp paprika

  • 1/4 tsp garlic powder

  • 1/4 tsp onion flakes

  • 1/4 tsp red pepper flakes

  • 1/4 tsp dried oregano


  1. Pre-heat oven to 400F. Toss tofu with taco seasoning. Spread it on a lined sheet pan and bake for 15 minutes at 400F.

  2. In a medium sauce pan bring 3.75 cups salted water to a boil. Cover & lower to medium-low heat and cook 1.5 cup rice until water is absorbed (about 20 minutes). Remove from heat.

  3. In the meantime, wash & prep the rest of the ingredients and add them to a large bowl.

  4. Once the grated tofu is ready, add it to the bowl and stir it all together. Optional: if you have vegan sour cream or other dressings at home such as sriracha etc. feel free to add!
