For our May 20th Food & Community session, we kept things fresh and sweet with a protein-packed 5 Bean SaladĀ and classic Chocolate Chip Cookies. Hereās how you can make them at home!
š« 5 Bean Salad (Serves ~24)
Adapted from Easy Salads

This vibrant, hearty salad is perfect for summer meal prep or as a side dish at gatherings. It gets better the longer it sits!
Ingredients:
1 can black beans (14.5 oz)
1 can garbanzo beans (chickpeas)
1 can pinto beans
1 can kidney beans (light or dark)
1 can cannellini beans
1 can corn
½ red onion, diced
1 green bell pepper, chopped
2 celery stalks, chopped
ā cup cilantro, chopped
Dressing:
½ cup red wine vinegar
1 tbsp lemon juice
¼ cup sugar
½ tsp salt
½ tsp coarse black pepper
¼ cup olive oil
Instructions:
Drain and rinse all beans and corn.
In a large bowl, combine beans, corn, onion, bell pepper, and celery.
In a small bowl, whisk vinegar, lemon juice, sugar, salt, and pepper until sugar dissolves. Slowly whisk in olive oil.
Pour dressing over salad and toss well. Stir in cilantro.
Chill for at least 4 hours before serving for best flavor
šŖ Chocolate Chip Cookies (serves ~25)
A timeless recipe to satisfy your sweet tooth. Crisp edges, soft center, and melty chocolate chips.

Ingredients:
ā cup butter
ā cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs
2 tsp vanilla
3 cups all-purpose flour
1 tsp baking soda
1ā1½ cups chocolate chips (about 1 bag)
Instructions:
Preheat oven to 375°F.
Cream butter, shortening, and both sugars.
Add eggs and vanilla; mix well.
Stir in flour and baking soda.
Fold in chocolate chips.
Drop spoonfuls onto a baking sheet and bake 8ā10 minutes until golden brown.
