Black Bean Stuffed Sweet Potatoes

Ingredients

Sweet Potato
  • 4 sweet potatoes

  • 1 tbsp of olive oil

  • 1.5 cups of refried black beans (drained and rinsed)

  • 1 cup chopped tomatos

  • 1/2 cup of corn

  • 1/3 cup chopped cilantro

  • 1/4 tsp of salt

  • 1/2 red onion chopped

  • 1 clove minced garlic

  • 1/2 lime juiced

  • 1 pinch pepper and chili flakes (optional)

Guac & Sour Cream
  • 1 avocado

  • 2 tsp lime juice

  • 1//4 tsp salt

  • 1/3 cup Greek yogurt

  • 1/2 tsp lime juice

  • 1/4 tsp salt


Instructions

  1. Preheat over to 400F

  2. Using a fork, poke small holes in sweet potatoes going all the way round, about 1 inch apart. Paint sweet potatoes with oil to lightly coat.

  3. Bake for 40 minutes to 1 hour, or until fork tender

  4. In a bowl combine black beans, tomato, corn, cilantro, red onion, and garlic. Drizzle with lime juice and olive oil; sprinkle with salt, pepper, and chili flakes. Mix to combine

Easy Guacamole Recipe
  1. Mash avocado in a bowl with lime juice and a pinch of sea salt

  2. Prepare vegan sour cream: in a separate bowl mix together with yogurt, lime juice, and sea salt

  3. Once sweet potatoes are finished, cut in half and fill with black bean melody. Top with easy guac and drizzle with sour cream
