Under 200 calories/slice
10 slices, 8 x 4 in. loaf
1 ½ cups pumpkin puree
1 ½ cups white whole wheat flour
½ cups honey
⅓ cups plain Greek yogurt
2 tbsp. canola oil or coconut oil
1 large egg
1 tsp. vanilla extract
1 tsp. baking soda
1 ½ tsp. ground cinnamon
¼ tsp. ground nutmeg
¼ tsp. ground cloves
¼ tsp. kosher salt
Chopped nuts (e.g., pecans, walnuts)
Beat together wet ingredients and the pumpkin puree.
Stir in baking soda, spices, flour, and any mix-ins.
Pour the batter into a loaf pan (coated with baking spray) and bake for 30 mins at 325°F.
Tent the pan with aluminum foil and bake for another 25-35 mins.
Cool for 30 mins before slicing. ENJOY!
