Recipe

10 slices, 8 x 4 in. loaf

Ingredients

  • 1 ½ cups pumpkin puree

  • 1 ½ cups white whole wheat flour

  • ½ cups honey

  • ⅓ cups plain Greek yogurt

  • 2 tbsp. canola oil or coconut oil

  • 1 large egg

  • 1 tsp. vanilla extract

  • 1 tsp. baking soda

  • 1 ½ tsp. ground cinnamon

  • ¼ tsp. ground nutmeg

  • ¼ tsp. ground cloves

  • ¼ tsp. kosher salt

Optional:

  • Chopped nuts (e.g., pecans, walnuts)

  • Chocolate chips

  • Millet

  • Banana

Directions:

  1. Beat together wet ingredients and the pumpkin puree.

  2. Stir in baking soda, spices, flour, and any mix-ins.

  3. Pour the batter into a loaf pan (coated with baking spray) and bake for 30 mins at 325°F.

  4. Tent the pan with aluminum foil and bake for another 25-35 mins.

  5. Cool for 30 mins before slicing. ENJOY!
