Mason Jar Meals: vegan and gluten free spiced bean and rice bowl

Mason Jar Meals are free meals for students who are at Queen's this summer to promote accessible food resources on campus, especially when on campus food spots are closed for the summer!
For our June Mason Jar Meal, we are making a Gluten-Free and Vegan, Spiced bean and Rice bowl. We hope you enjoy this recipe!

In your mason jar meal, you will find:
1½ cups White rice (in a separate bag)
1 cup Black beans
½ cup Dehydrated onions
2 tbsp Chilli powder
2 tsp Garlic powder
1 can of Corn
Preparing the bean mix
Empty the contents of the mason jar meal (NOT RICE) into a pot and add 8 cups of water.
Bring to a boil and then reduce the heat to a gentle simmer
Cook for 2 hours to make sure the unsoaked black beans are thoroughly cooked, stirring occasionally.
Continue cooking until the black beans are tender, as these take the longest to cook. Once cooked, add a pinch of salt to the bean mixture for taste (optional)
Cooking the Rice
Rinse the rice (optional)
In a separate pot from the other contents, combine 1.5 cups of rice with 3 cups of water.
Bring to a boil, reduce the heat, cover, and allow to simmer for 15 minutes.
Remove from the heat and let it stand for 5 minutes.
Serving
Serve the spiced beans over the cooked rice
Add salsa and shredded cheese (optional for taste)
