Tofu Veggie Skewers: Fresh Food Box

For our July Fresh Food Box, we are making Gluten-Free, Vegan-friendly, Tofu Veggie Skewers. This is a great recipe for a barbeque with all your friends!

In your bag, you will find:
Tofu
Bell Peppers
Zucchini
Red Onion
Canned Pineapple
Italian Style Seasoning
Red Chili Seasoning
Skewer sticks
Preparing the Tofu
Cut the tofu into small cubes, to your desire, that can fit on the skewer.
Season the tofu with the provided seasonings, smoked paprika and dried oregano, to your liking.
Preparing the vegetables
Wash the provided vegetables and then cut all of the vegetables into roughly 1 inch squares that once again can be placed on the skewer.
Remove pineapples from the can and cut into 1-inch squares as well.
NOTE: Zucchini should be sliced into circles instead of cut into 1 inch squares.
Preparing the skewer
Now that all the components of the skewer are ready, place them on the skewer in an alternating fashion (e.g. pepper, tofu, red onion, pineapple, zucchini, repeat).
Cooking the skewers
(*TIP: soak the wooden skewers in water for at least 20 minutes before grilling or baking the skewers to prevent the wood from scorching)
If using a Barbeque
Preheat the barbeque to 220 degrees Celsius (425 degrees Fahrenheit)
Place the skewers directly over the heat for 10-15 minutes, rotating the skewers every 2-3 minutes until all sides are evenly cooked.
When complete, the vegetables should be lightly charred, and the tofu will be golden brown around the edges.
If using an oven
Preheat the oven to 220 degrees Celsius (425 degrees Fahrenheit)
Arrange the skewers on a parchment lined baking tray (or lightly greased)
Bake the skewers for 10-12 minutes, and then turn each skewer over.
Continue baking the skewers for another 10-12 minutes until vegetables are tender and the tofu is lightly browned.
