Ingredients
2/3 cup orange lentils
2/3 cup green lentils
1 tablespoon curry powder
1 tablespoon dried chopped onions (or onion powder)
1 tablespoon dried minced garlic (or garlic powder)
1 vegetable bouillon cube
1/2 teaspoon cayenne pepper
1 can (400 ml) of full fat coconut milk
Instructions:
In a large pot add all the ingredients from the mason jar (seasoning, lentils, bouillon cube).
Add four cups of water and one 400 ml can of full fat coconut milk to the pot. Stir to combine.
Bring to a boil over high heat, reduce heat to low, and simmer until the lentils are tender and the mixture has reduced, about 30 minutes.
Serve on its own, with naan, or rice!
