Ingredients
1 diced bell pepper
1/2 onion (diced)
2/3 cup cheddar cheese
t tbsp sour cream
1 tsp salt
salsa and spinach (as much or little as you desire!)
3 slices of bacon
5 large eggs
4 whole wheat tortillas
1 can refried beans
1 tbsp cilantro
1/2 lime (juiced)
Instructions
Dice bacon, bell peppers, and onion into small cubes.
Heat a large non-stick pan to high heat
Add olive oil and diced ingredients to the pan (cook on high for 3-4 minutes or until the bacon is crispy)
Transfer the food from the pan to a bowl, carefully drain the grease (NOTE: Pan will be hot), and return the pan to the stove for the eggs
In a large bowl, whisk the eggs, sour cream, and salt together
Add olive oil to the pan and heat for 1 minute
Add the eggs to pan along with the shredded cheese
Cook the eggs, stirring frequently for around 2 minutes or until eggs begin to set in the pan
Transfer eggs into another bowl
Heat oil in saucepan over medium heat. Add refried beans & 1/4 cup of water. Heat beans for 5 minutes & add water if pan dries out. Turn heat off & add cilantro, salt, and lime juice.
Lay each tortilla on a flat surface, add any desired ingredients, cheese, sour cream, salsa, etc.
Fold into burrito shape and serve (*for a burrito place the ingredients in the bottom half, fold in the two sides, fold in the bottom half, and then roll closed)
Tortillas are optional to toast in a pan with oil olive, cook 1-2 minutes per side until the outside is crispy and golden.

Food Safety:
Ensure you are using different cutting boards for bacon, vegetables & cheese
Ensure your non-stick pan does not have any scratches or issues. Throw out non-stick pans as soon as there is damage to the cooking surface.
When storing bacon & other meats in the fridge, ensure it is on the bottom shelf
Do not let your wrap sit in room temperature for more than 2 hours.
Let leftovers cool, then place in airtight container & place in top shelf of the fridge. Eat leftovers within 2 days
