Coconut Curry Soup


  • 1 cup orange lentils

  • 1 cup green lentils

  • 1 tablespoon curry powder

  • 1 tablespoon dried chopped onions

  • 1 tablespoon garlic powder

  • 2 veggie bouillon cubes

  • 1 small dried chile pepper

  • 1 can coconut milk


  1. In a saucepan, add the mason jar contents and can of coconut milk.

  2. Pour in four cups of water into the saucepan and place the saucepan on the stovetop over high heat.

  3. Bring the mixture to a boil, then reduce the heat to low to maintain a simmer.

  4. Allow the mixture to simmer for about 20 minutes. During this time, the lentils should become tender.

  5. After 20 minutes, remove the chile pepper from the saucepan and discard it.

  6. Season the dish to taste with your choice of seasonings, and enjoy!
