Moroccan Lentil Soup

A recipe for healthy moroccan lentil soup that can be pre-made and packaged in a jar. The following recipe yields 3 cups.

Ingredients
1 3/4 cup red lentils
2 tbsp dried onion flakes
1/2 tsp garlic powder
1/2 tsp cinnamon
1 tsp coriander
1 tsp turmeric
1/2 tsp cumin
1 tsp dried parsley
1/2 tsp ground pepper
1 tsp sea salt
1 bay leaf
Instructions
In a large pot, add the mason jar contents and 7 cups of water.
Bring mixture to a boil then let simmer with the top on for 20 minutes.
Remove lid and allow the mixture to simmer for about 10-15 minutes more. During this time, the lentils should become tender.
Feel free to add chopped kale, chard or other greens in last 5 minutes of cooking for a veggie boost.
Spice up the dish with your choice of toppings, and enjoy!

How to Cook Long-Grain Rice
Adapted from Simply Recipes by Emma Christensen.

For 1 cup of rice, use 2 cups of water and a pinch of salt. Bring to a boil, then reduce to a simmer. Cover and cook for 15–20 minutes (white rice) or 35–45 minutes (brown rice), until the water is absorbed and rice is tender. Let sit for 5–10 minutes off heat, then fluff and serve.
