Ingredients
2 cups cooked brown rice
1/3 cup corn
1/3 cup black beans
1/3 cup diced/chopped tomatoes (any kind)
¼ cup aged white cheddar cheese (optional, not included)
1/2 large avocado, sliced
Cilantro to taste
1 slice of lime (squeezed)
Spicy BBQ Sauce:
1/4 cup Spicy BBQ Sauce
.5 Tbsp sriracha
1 Tbsp Greek yogurt
.5 Tbsp Olive Oil
2 Tbsp Milk (dairy or non-dairy is ok)- Oat milk was used in Fresh Food Box
(Dressing provided- Use 1-2TBSP for each bowl)
Instructions
(This Fresh Food Box provides 2 separate bowls at least)
Cook the rice: Pour 1 cup rice and 2 cups water (or 2 cups rice and 4 cups water if cooking all the rice) into a saucepan/pot. Bring to a boil. Once boiling, stir rice, cover with a lid and reduce heat to low. Simmer for 45 minutes. Let stand, covered, for 5 mins.
While rice is cooking, dice tomatoes, cut avocado into cubes, and chop up cilantro. Make sure to wash all produce before preparing.
Once cooled, transfer brown rice into a bowl. Top with corn, black beans, tomatoes, cheese (optional, not provided) and sliced avocado. Garnish with cilantro and squeeze juice from 1 slice of lime.
Top with BBQ dressing. If you want to prepare spicy BBQ dressing in the future, mix all ingredients in a mason jar or squeeze bottle until well combined.
