Creamy Mushroom & Sundried Tomato Risotto

Creamy, cozy, and packed with umami, this mushroom and sundried tomato risotto tastes like something you would order at a restaurant. The dried mushrooms add depth, the sundried tomatoes bring a slight tang, and the parmesan ties everything together into a rich, satisfying bowl. It is made in one pot with pantry staples, takes minimal effort, and works perfectly for busy student nights.


Ingredients

  • 2 cups (420 g) arborio rice

  • 1/2 oz (15 g) dried mushrooms

  • 2 tbsp sundried tomatoes (not in oil), chopped

  • 1 tbsp dried chives

  • 1 tbsp dried onion flakes

  • 1/2 tsp dried oregano

  • 1/2 tsp garlic powder

  • 1 vegetarian bouillon cube

  • 3 cups water

  • 1/4 cup parmesan cheese


Instructions

  1. In a large saucepan, bring 3 cups of water to a boil.

  2. Add all ingredients except the parmesan cheese. Stir well to combine.

  3. Return to a boil, then reduce heat to low. Cover and simmer for about 20 minutes. Check often and stir.

  4. Remove from heat and let stand, covered, for 5 minutes.

  5. Check that the rice is tender but still slightly firm.

  6. Stir in the parmesan cheese until creamy and well combined. Serve warm.
