One-Pot Tomato Basil Pasta

Need a quick, easy, and delicious meal? Look no further, try out the one-pot tomato basil pasta. The following recipe serves 4 people.

Ingredients

  • 8 ounces whole-wheat rotini

  • 2 veggie bouillon cubes

  • 1 (15 ounce) can no-salt-added diced tomatoes

  • 2 tablespoons extra-virgin olive oil

  • 1 ½ teaspoons Italian seasoning

  • ½ teaspoon onion powder

  • ½ teaspoon garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon crushed red pepper

  • 6 cups baby spinach (or baby kale)

  • ½ cup basil/half a bunch

  • 4 cups of water

  • Grated parmesan cheese for garnish (optional)


Instructions

  1. In a large pot, combine 4 cups of water and dissolve 2 bouillon cubes in it.

  2. Add the pasta, diced tomatoes, olive oil, Italian seasoning, onion powder, garlic powder, salt, and crushed red pepper to the pot.

  3. Cover the pot and bring the mixture to a boil over high heat.

  4. Once boiling, uncover the pot and reduce the heat to medium-high.

  5. Cook the mixture, stirring frequently for 10 minutes.

  6. Stir in the chopped kale or spinach and continue cooking, stirring often, until most of the liquid has been absorbed (5 to 7 minutes).

  7. If incorporating spinach, add it after about 10 minutes to cook in the remaining 2 to 3 minutes.

  8. Stir in the chopped basil.

  9. Garnish with parmesan cheese if desired and enjoy!
