Ingredients
Marinade:
1/2 cup olive oil (or oil of choice)
5 tablespoons of soy sauce or tamari (or 1 1/2 teaspoons of salt)
3-4 tablespoons lime juice, adjust to taste
2 1/2 teaspoons of maple syrup
2 gloves garlic, finely grated or chopped
1 3/4 teaspoon ground cumin
1 3/4 teaspoon paprika
1/2 teaspoon black pepper
optional: 1/4 teaspoon cayenne pepper
Vegetables
1 red pepper
1 yellow pepper
1 onion
300g mushrooms
Toppings
1 avocado
6 tortillas
optional: sour cream
Instructions
Make the marinade in a bowl by combining the olive oil, spices, juice from one lime, and mix to combine.
Thickly slice the peppers and onions, slice the mushrooms, then place on a large, deep baking tray.
Coat everything in the marinade and set aside for 15-20 min. If you don't have time, feel free to bake straight away.
While the vegetables marinate, preheat the oven to 390° F. Once oven is preheated, add the mushrooms, peppers, and oniond into the oven. Bake for 15 minutes, then give everything a stir.
Increase oven temperature to 425° F and bake for another 20 minutes until all the jucies bake out and the vegatables have a nice char.
Assemble your fajitas by putting the vegetables on the bottom of each tortilla. Finish off with avocado, sour cream (optional) and a squeeze of lime. Enjoy!
